Vegan Dessert Recipe: Carrot Cake!
Moist, warmly spiced, and packed with freshly grated carrots, this Vegan Carrot Cake is a delicious plant-based treat that everyone can enjoy!
🥕 Vegan Carrot Cake Recipe
Ingredients: 2 cups all-purpose flour, 1½ teaspoons baking powder, 1 teaspoon baking soda, 1½ teaspoons cinnamon, ½ teaspoon nutmeg, ½ teaspoon salt, ¾ cup brown sugar, ½ cup vegetable oil, ¾ cup unsweetened applesauce, 1 teaspoon vanilla extract, 2 cups finely grated carrots, ½ cup chopped walnuts or pecans, and ¼ cup raisins (optional).
For the vegan cream cheese frosting: 8 ounces vegan cream cheese, ¼ cup vegan butter, 2 cups powdered sugar, and 1 teaspoon vanilla extract.
Directions: Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. In a separate bowl, mix the brown sugar, oil, applesauce, and vanilla. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the grated carrots, nuts, and raisins.
Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely before frosting.
For the frosting, beat the vegan cream cheese, vegan butter, powdered sugar, and vanilla until smooth and creamy. Spread over the cooled cake, add a sprinkle of chopped walnuts and cinnamon, then slice and enjoy!
